85% Viognier from Thierry de Marne in Minervois & 15% Cinsault from the Oustrics of Le Mazel in the Ardéche. Viognier sees 7 days of maceration, and Cinsault sees 5 days of maceration before pressing, followed by 6 months of élevage in fiberglass after blending.
