Mostly Chardonnay, with Menu Pineau, Pinot Noir, & Cabernet Franc from organically cultivated vines ranging 15-80 years old in Cheverny. Grown on clay, limestone, and gravel soils. Grapes are hand-harvested, direct pressed, and fermented according to Méthode Champenoise. Aged on the lees for 6 years prior to disgorgement and bottling.
