Delaware Phoenix is an artisanal, small-batch absinthe distillery in the Western Catskills working with traditional copper pots and locally grown botanicals, based on 19th-century methods. ‘Walton Waters’ is an herbal, medium-bodied absinthe, showing notes of citrus fruits, it pays homage to the Catskill’s vibrant rivers and streams. No flavoring additives or artificial colors added.
