Pear Eau de Vie

This eau de vie is made from 100% Bartlett pears that are destemmed and cored by hand. This process takes a team of 10 people nearly a month after each harvest. The fruit is crushed and fermented using ambient yeasts, then distilled twice in a small, wood-fired pot still. It is bottled at 45%, having been brought down to proof with collected rainwater.
