Wild Cherry Artisanal Liqueur

Growing on Laurent’s land are ungrafted cherry trees – the two varieties used for this liqueur are called guigne and guin. They are left to fully ripen sometimes falling from the tree before being harvested. Once dried, they are fully destemmed and pitted by hand. The flesh is then put into an eau de vie of Folle Noire grapes and left to macerate until the cherry essence is fully extracted. This is then racked and the fruit solids are pressed and redistilled. This pomace distillate is then blended with the macerated spirit and adjustment with Folle Noire grape sugar.
