Tomato Artisanal Liqueur

After harvesting, Laurent first allows the tomatoes to dry before fully destemming and removing bitter components by hand. The flesh of the fruit is then put into an eau de vie of Folle Noire grapes and left to macerate until the tomato essence is fully extracted. The liquid is then racked and the resulting solids are pressed and redistilled. This distillate is blended with the tomato-infused eau de vie and sweetened with Folle Noire grape sugar to finalize this tomato liqueur. The flavor profile is an incredible blend of savory and sweet – tomato leaves, cut grass, arugula, cantaloupe, dates.
