50% Pinot Noir & 50% Sauvignon Blanc, from Petaluma Gap and Redwood Valley respectively. Pinot Noir sees only 24hr of maceration while the Sauvignon Blanc sees a long infusion style maceration (90% juice + 10% skins), all before pressing off to large format puncheons for aging.
